  1. Preheat your oven to 350° F. Prepare the Wright Brand Bacon according to package instructions. Once done, set aside to cool.
  2. In a small bowl, combine the mashed bananas and sour cream. Set aside.
  3. In another bowl, combine the flour, baking powder, baking soda, and salt.
  4. In a large bowl, cream the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time into the creamed butter and sugar mixture. Mix in the vanilla extract. Gradually add the banana mixture into the butter mixture, stirring until well combined.
  5. Gradually add the flour mixture into the wet ingredients, stirring just until the flour is incorporated. Do not over-mix.
  6. Pour half of the batter into a greased and floured 9x5-inch loaf pan. Lay 3 slices of bacon on top of the batter, pushing them slightly down into the mixture. Pour the remaining batter over the bacon, ensuring it's fully covered. Lay the remaining 3 slices of bacon on top of the batter, again pushing slightly down into the mixture.
  7. Bake for 1 hour, or until a toothpick inserted into the center comes out clean. If the bread is browning too quickly, tent it with aluminum foil. If the bread is undercooked, bake it for another 10-15 minutes. Carefully remove the bread from the oven and allow it to cool in the pan for 10 minutes before removing it to a wire rack to cool completely.
