Blueberry Hush Puppy Pudding

The humble hushpuppy, or corn fritter as some know it was basically made to be transformed into a bread pudding. Think of this like a sweet bread stuffing but made with cornmeal and laced with gorgeous, plump and sweet blueberries. Also, if you don’t have hushpuppies and/or don’t want to make them then feel free to sub for corn bread. You got this. 🤘🏼 Adam

Instructions

  1. Preheat the oven to 350F.
  2. In a large bowl, beat together: milk, eggs, butter, vanilla extract, bourbon whiskey, sugar and a pinch of salt. Add the torn corn fritters and mix by hand, gently squeezing the fritters into the liquid.
  3. Spoon the bread pudding mixture into a greased 8x10 inch baking dish. Bake for 35-40 minutes, then let cool slightly.
  4. Serve with ice cream.
