Colorado Rocky Mountain Oysters (Deep-Fried)

Here in the USA, the mountainous state of Colorado is known for a distinct delicacy that might, well, make you cringe. Let's not dance around it, Rocky Mountain oysters are the testicles of an adult bull. The "oysters" are semi-frozen before being sliced thin, covered in an all-purpose flour dredge and deep fried until golden-brown and crispy. Honestly, and I have no bias here, they're delicious.

As you might imagine, I was skeptical going into the taste test. To my surprise what entered my mouth (insert ball joke here) was a crispy, beefy fried coin of sorts that was just tender enough while still holding onto some "chew" after the frying process. The tangy cocktail sauce and cooling Horseradish peppercorn sauce were the perfect additions to the par-tay. The "oysters" tasted less like an oyster and more like a semi-chewy beef Pringle with a taste not "beefier" than that of beef liver. Oddly enough, it was a pleasant experience.

I understand bull testicles might not be too easy to procure and not the most popular thing at the local supermarket, or big box stores here in the US so I've gone ahead and included a source to order online if you are interested. Fried Rocky Mountain Oysters (Bull Testicles)

Ingredients

Rocky Mountain Oysters
Horseradish Peppercorn Sauce
Cocktail Sauce

Instructions

Rocky Mountain Oysters
  1. Preheat frying oil to 350F. In a large bowl mix the flour, salt, and cayenne pepper together.
  2. Use a sharp knife to cut down the oyster, remove the membrane and discard. Slice the oyster into thin coins.
  3. Drop the oyster coins in the hot oil and cook for 3-4 minutes, remove from the oil and let rest for 5 minutes. Fry the oyster coins a second time for 2-3 more minutes, or until golden brown.
Horseradish Peppercorn & Cocktail Sauce
  1. Mix all ingredients together. Refrigerate until needed. Both sauces can be made up to 2 days in advance.
