Instructions
Smoked Chicken
- Brine the chicken for at least 2 hours, or up to 12 hours. Remove from the brine and pat dry.
- Apply dry rub to the chicken, smoke low and slow with hickory until cooked through. 1 to 1.5 hours depending on size of the chicken.
- Remove from heat and immediately dunk or pour over the sauce, let rest for 10 minutes and serve.
White BBQ Sauce
- Mix all ingredients together, transfer to sealable jar and refrigerate until needed.
Adam's Notes
- For the chicken brine, for every 4 cups of water, add a quarter cup kosher salt and quarter cup brown sugar.
- If you want to “baptize” the chicken, triple or quadruple the white BBQ sauce recipe, otherwise you won’t have enough.
Example brine from video:
- 2492g = chicken with bones (20%) accounted for and no water.
- 6582g = water plus chicken with bones accounted for.
- 3% salt = 190g
- 2% sugar = 132g
