The UK and US are cut from the same cloth, but are still very different. In the US it's "arugula" not "rocket," it's "eggplant" not "aubergine," and we definitely don't watch "telly," it's T-mf'in-V, but I digress. Today, we're talking about the best Yorkshire Pudding recipe that might not resemble the instant Jell-o packet powder variety of my youth, but damn... it's much better (especially when served with any big roast with tasty juices to sop up.) The internal texture is super interesting and resembles something of a mix between a soft roll and custard... you'll see.

- Preheat oven to 400F. Fill metal muffin tin with fat. Bake empty, fat filled muffin tin on the center rack for 15 minutes to charge with heat.
- In a large bowl, whisk together eggs, thyme, salt and pepper. Add flour on top and whisk again until a smooth, lump-free, THIN batter forms. The batter should only just coat the back of a spoon.
- Carefully remove the muffin tray and pour in enough batter to fill the holes slightly over halfway. Set the muffin tray on a sheet tray and bake for 25 minutes
- Remove puddings and poke hole in the top, allow to cool for 5 minutes. Serve alongside any tasty holiday roast, dunk in jus and CRUSH.
