Old-School Prime Rib, Shrimp Cocktail & Dirty Martini

Old-School Prime Rib, Shrimp Cocktail & Dirty Martini

- Trim, french and slice. Season with salt. Truss.
- Roast at 200F for 4 hours, until internal of 130-132F.
- Allow to rest for 30 minutes. Slice to ½ inch pieces.
- Serve with jus, horseradish sauce, mashed potatoes and gravy.
- For the horseradish sauce, mix everything together and allow to sit for 30 minutes before serving.
- Peel, devein and rinse shrimp.
- Add all aromatics to a large pot of salted water. Blanch the shrimp for 20 seconds then shock in ice bath. Remove from the water and dry. Set aside until you're ready to serve.
- Mix everything together. Allow to meld in the fridge for 30 minutes before serving.
- Store in a sealable container for up to 4 days.
- Chill your glass for at least 30 minutes. It should be frosty when it comes out of the freezer.
- Add the gin, vermouth and olive brine to a cocktail sharker or large cup. Stir the drink for 30 seconds, until the ice begins to melt slightly.
- Strain the cocktail into the frosted martini glass. Garnish with blue cheese olives and CRUSH.
